Trillium Brewing Company

Boston, MA (We've had too many of these. See pages 2 and 3)
Pete - The brewery has a bar/restaurant. You'll need reservations for food, but there's a small-ish bar with a couple TVs to drink at, plus beer to go. In the summer (not sure exact schedule), Trillium also has a beer garden on the Greenway in downtown Boston. It's incredibly popular, especially for post-work drinks, and they typically have ~10 beers on tap, along with a couple wines for non-beer drinkers. They don't have flights, but they typically have a mix of pale ales, imperial IPA's, sours, and dark beers. Also, the garden is mostly in the shade after ~5, so if it's hot out, don't worry. If it's not that warm, bring a jacket.

Super drinkable. Some bitterness and lots of floral flavor.

Trillium Almond Crunch
Stout - 6.5% ABV
Pete
This is my 2nd of this newish series (as of 4/8/2020) of relatively low alcohol stouts that are intended to taste like candy bars. This is definitely nutty and fudgy, but it's a bit too sweet. Definitely don't plan on more than 1 in a row. Excellent if you can split it with someone - beyond that the sweetness will start to eat at your enjoyment.

Trillium Barrel-Aged Chocolate Churro
Imperial Stout - 13.1% ABV

Super rich, with cinnamon and chocolate flavor both obvious. Hard to complain about that combo. Still, it doesn't blow me away as much as expected.

Trillium Barrel-Aged Chocolate Covered Peanut Brittle
Imperial Pastry Stout - 15.7% ABV

This just tastes like nutty chocolate bourbon. Really hard to argue with that.

Super rich. The chocolate and vanilla combo is hard to beat. Excellent beer.

Trillium Barrel Aged Feed Your Soul
Imperial Stout - 14.2% ABV
Pete
Collaboration with Weathered Souls (haven't had any of those as of 4/5/23). A tiny bit smoky, but not enough to notice it if you didn't already know it was there. Super rich chocolate, which by itself is enough for it to be excellent.

Trillium Barrel Aged Night & Day In Tequila Barrels

Trillium Barrel Aged Peppermint Hot Chocolate

Tons of bourbon and chocolate flavors with a tiny hint of peppermint. I drank this on Christmas Eve, which was the correct time to drink it.

Trillium Bees
Wild Ale - 5.7% ABV

Funky and sour with a medium amount of honey flavor. It's pretty straightforward, but perfectly executed.

Trillium Bianca Guava Mango Lassi Gose
Gose - 6% ABV
Pete
It's really hard to beat the mango and guava combination. You can't really see it in the picture, but there were actually what appeared to be flecks of vanilla suspended in the beer too, which was pretty cool. It's definitely sweet, but it's a great dessert beer.

Trillium Big Bird
Imperial IPA - 9.4% ABV
Pete
This beer is extremely popular, and I can see why. Super citrusy, and a very very creamy body that lingers after you put it down. I would prefer just a touch less creamy with this flavor profile, but it's still amazing.

Ratings: Pete - 5 Shyoh's

Picture
Trillium Black Currant Soak
Sour - 6.3% ABV
Pete
Super sour going down with a little sweet/fruity flavor to it also. I'm not sure what black currant tastes like, but this had a specific fruit flavor I didn't recognize, so I'm sure it's that. Super carbonated too, which makes the super sourness not linger too long.

Trillium Black is Beautiful
Imperial Stout - 10.7% ABV
Pete
Collaboration with White Lion (haven't had any of those as of 8/14/20). This just tastes like vanilla and liquor. It's pretty flavorful, but quite boozy.

Picture
Trillium Black Mettle
Imperial Black IPA - 8.4% ABV
Pete
I wouldn't know this was an IPA while drinking it. It is a delicious light-bodied dry toasty porter that finishes chocolatey. Maybe a touch of pine at the very end if you reeeeeally think about it, but mostly just a great porter. Fine by me.

Trillium Blackberry Super Soak
Sour - 7.1% ABV

Absolutely incredible sour. Good amount of blackberry flavor and sweetness to go along with a medium-high amount of sourness. A little extra alcohol too for a sour, really really good.

Trillium Broken Angel
Belgian Strong Golden Ale - 8.7% ABV

Damn good beer. It's very obviously Belgian. It has a little spiciness to it, and it doesn't taste nearly as strong as the ABV might indicate. Delicious.

Ratings: Pete - 6 Shyoh's

Picture
Trillium Bumpkin Island
IPA - 6.8% ABV
Pete
Ultra creamy mouthfeel with what I thought was a good amount of dank to go along with citrus flavors. The dank dominated for me (and I liked it a lot), but it wasn't mentioned in the official description anywhere, so maybe I'm crazy.

Ratings: Pete - 5 Shyoh's

Picture
Trillium Buncha Bananas
Imperial Stout - 11.5% ABV

Collaboration with Other Half. Lots of dark chocolate. The banana doesn't really come through until it warms a little. Somehow this is good, not great. Maybe my expectations were too high.

Trillium Cutting Tiles: Citra
Imperial IPA - 8.5% ABV

Really damn good IPA. The honey is definitely there, but not overpowering. Creamy and citrusy too to give you a nice well rounded beer. Reminds me of Beekeeper but a tiny bit less honey.

Trillium Cutting Tiles: El Dorado
Imperial New England IPA - 8.5% ABV

Picture
Trillium Cutting Tiles: Galaxy
Imperial New England IPA - 8.5% ABV
Pete
Pretty obvious honey flavor in this one, with the accompanying sweetness, but definitely not too sweet. The galaxy hops balance it nicely with a fruitiness that still has some earthy flavors behind it. Really good.

Ratings: Pete - 6 Shyoh's

Picture
Trillium Cutting Tiles: Mosaic
Imperial IPA - 8.5% ABV
Pete
This is incredibly dangerous for me. Super citrusy, with a little sweetness from the honey (and high ABV). There's a decent amount of earthiness in the background to balance it. Awesome.

Picture
Trillium Cutting Tiles: Mosaic DDH
Imperial IPA - 8.5% ABV
Pete
Absolutely love this, like the single DH Mosaic version. This is pretty extreme on the earthiness, overwhelming the citrus, but the sweetness does come through from the honey to balance it a little.

Trillium Cutting Tiles: Nelson Sauvin
Imperial IPA - 8.5% ABV

Trillium Daily Serving: Mixed Berry Batch 2
Berliner Weisse - 4.5% ABV
Pete
Super super fruity. A tiny bit of tartness, but like a tart fruit, not a sour beer. The intensity of the fruit flavor means I'd want this in small quantities (10 oz or less), but it's a real winner at that size.

Collaboration with Evil Twin. A couple breweries that can really make stouts collaborating on this one, and it doesn't disappoint. Just a boozy, slightly nutty cinnamon roll in a glass. Outrageously good and quite dangerous at that ABV.

Trillium Dialed-In w/Moscato Juice
Imperial New England IPA - 9.2% ABV
Pete
Incredible. Intensely dry and peppery IPA, which is not what I was expecting for something with Moscato juice in it. I don't specifically taste Moscato (or even grape), but there is definitely a hint of fruity in there. I'm just impressed that an IPA this strong wasn't too sweet for me.

Trillium Dialed-In w/Sauvignon Blanc Juice
Imperial IPA - 8.5% ABV
Pete
Delicious fruity and creamy IPA. Maybe notice a touch of bitterness, but the other flavors dominate. The grape comes through a tiny bit at the end of the sip, but the creaminess really takes over the finish. A little more of that than I'd like, but it's still an awesome beer.

Trillium Dialed-Up w/Mosaic & Riesling Juice
Imperial New England IPA - 11% ABV
Pete
I don't trust IPA's this strong, but this one really did it for me. It's definitely on the sweet side, which is usually my problem with this much booze in an IPA (and the Riesling juice can't help), but the earthiness of the mosaic hops really balance this for me. There's also a slight hint of bitterness to go along with all the citrus/grape flavors. Really excellent.

Trillium Double Dry Hopped Congress Street
IPA - 7.2% ABV

Incredible IPA. A little creamy, but not too much (an issue I have with some of Trillium's beers), and a massive amount of tropical fruit. It says "light, modest bitterness", but I didn't get any bitter at all. Granted, I was quite a few deep. Awesome beer.

Crowd favorite the day I had this at the beer garden. It has very little bitterness to go along with a burst of citrusy flavor. The texture is creamy, but not so much that it leaves a weird taste in your mouth (which some of Trillium's beers do and are still amazing).

Ratings: Pete - 6 Shyoh's

Trillium Double Dry Hopped Mettle
Imperial New England IPA - 8.9% ABV

Super creamy going down with a dry earthy finish. It definitely has all the smells of a tropical citrus bomb, but I appreciate that the flavor is more balanced, as IPA's this strong can lean too sweet usually.

Hard to find a better beer than this. It's pictured with water next to it because I realized after 3 of their beers that I'd want to have everything on the menu and actually remember it, and this was the best of the bunch. Smells and tastes super citrusy with a touch of creaminess (much less than many of their others) and maybe a tiny bit of bitter just to balance it out.

Exactly what I've come to expect from Trillium. Creamy citrusy goodness. I couldn't necessarily pinpoint specific fruit/citrus flavors in this one, but it was my 5th pint of 8%+ ABV beers in 90 minutes, so that's probably why. Still managed to take a good photo at least.

Super tart with raspberry and a tiny bit of funk in the background. I love it. I thought the funk was extremely subtle, but I got a comment about someone not liking this as much as their other sours because of the funk, so maybe it's more funky than I give it credit for. Either way, I love it. Fairly expensive.
