Definitive Brewing Company

Portland, ME
Pete - This brewery is between Allagash and another building that houses 3-4 breweries - always new ones popping up, all within 1/4 mile of each other. I went here on a Friday afternoon around 3pm and stayed for 2-3 hours. It's very new, having opened in late spring 2018, and I went early summer 2019. They have a bunch of styles, a very large taproom with outdoor space, and a food truck stationed outside. You can get small or large pours, and you will most definitely not be disappointed. Somehow managed to stand out in a city of amazing breweries. They also have video games.

Definitive 35
Session IPA - 3.5% ABV
Pete
I'd have no idea this was a low alcohol beer if I wasn't told as much. Incredible amount of flavor for that percentage. Super crushable. Perfect to start your day in the afternoon (or morning), or to cap your night off when you really need one more beer but don't really need the booze that comes with it (my method).

Definitive 35 w/Blueberries & Mango
Session IPA - 3.5% ABV
Pete
As you can tell by the picture, I got pretty far into this before even considering taking a picture. It's super super drinkable (was much needed low alcohol for me at the time), but also pretty fruity and delicious. Basically a fruit beer with some hoppiness.

Picture
Definitive Baby Steps
Milk Stout - 7.2% ABV
Pete
Pretty sweet, but it actually gets balanced nicely by coconut flavor. I usually don't love coconut, but it works really well in this one.

Picture
Definitive Bass Reflex
New England IPA - 7% ABV
Pete
Quite grassy. It's a little bit one note with the grassiness, but still pretty good.

Picture
Definitive Behind the Light DDH IPA
New England IPA - 7.4% ABV
Pete
Incredible beer. Super juicy with a tiny bit of dank mixed in. A little melon flavor in there that lingers in the finish.

Picture
Definitive Bicoastal
Imperial New England IPA - 10% ABV
Pete
Pictured on the left. Collaboration with North Park. Solid IPA with a good amount of tropical citrus, but it's so strong that it comes off super sweet.

Picture
Definitive Bushwa
Imperial Milk Stout - 8.2% ABV
Pete
Awesome, awesome beer. Tons of spices, a little sweet, and quite rich. It's like a complex dessert.

Picture
Definitive Citrus Raindrops
Sour - 4.2% ABV
Pete
Pictured on the left. Really tasty beer that's super tart and fruity. The sweetness from the tangerine, bitterness from the blood orange, and tartness from the lime really work well together.

Picture
Definitive Dazzle
Imperial Milkshake IPA - 8.2% ABV
Pete
Collaboration with Aslin. I obviously had very high hopes for an Aslin/Definitive collab, and I was not disappointed. This tastes like an orange creamsicle with a hint of cherry. I do wish the flavor level was a bit higher, but it's still an incredible beer.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Distant Gardens
Imperial New England IPA - 8% ABV
Pete
Somewhat creamy mouthfeel and super juicy flavor. It leans a bit too sweet for me, but it's still delicious.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Double Dry Hopped Sensitive Ears
New England Pale Ale - 5.6% ABV
Pete
Tons of juiciness and crazy easy to drink. Pineapple and grapefruit flavors, which complement each other well. Awesome.

Picture
Definitive Double Fruited Portals (Strawberry & Vanilla + Mango)
Sour - 4.9% ABV
Pete
This just tastes like somewhere between mango juice and a mango milkshake. And there's alcohol in it. I had it in the winter, but this would be an incredible summer beer.

Ratings: Pete - 6 Shyoh's

Picture
Definitive Euphoric Nights: Blackberry Orange Smash
Sour - 6.7% ABV
Pete
Pictured on the right. This is delicious. Pretty fruity with orange the obvious flavor, especially at first. It has pretty low carbonation, and some more might put this over this edge, but it's still excellent.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Float
Imperial New England IPA - 8% ABV
Pete
Really excellent, and very different. It has the citrus, creaminess, and a little peppery, but still somehow has an indescribable quality to it that puts it over the edge. You really just need to try it.

Ratings: Pete - 6 Shyoh's

Picture
Definitive Gravity Palace
Imperial New England IPA - 11% ABV
Pete
Tons of citrus. A little boozy but not too sweet like most IPA's this strong. I was shocked how good this was.

Ratings: Pete - 5 Shyoh's

Picture
Definitive In The Trees
New England IPA - 7% ABV
Pete
Collaboration with Kings (haven't had any of those as of 10/1/21). Pictured on the left. This is super tropical tasting, but it has too much coconut flavor for me. I just don't love Sabro hops.

Ratings: Pete - 4 Shyoh's

Picture
Definitive Late Nite Lollipop: Grand Raspberry Trifle
Pastry Sour - 7.5% ABV
Pete
Collaboration with Deciduous. I was expecting this to be overwhelmingly sweet, but I was pleasantly surprised to find this to be a pretty tart beer. The vanilla and cake flavors are definitely there, but this is a tart raspberry beer at heart. Exactly what I wanted.

Ratings: Pete - 6 Shyoh's

Picture
Definitive Margarita Machine
Imperial Sour - 9.1% ABV
Pete
Pictured on the left. Collaboration with Dewey. Unreal. Sour and salty with the fruitiness to balance. Hides the booze dangerously well.

Ratings: Pete - 6 Shyoh's

Picture
Definitive Orbit
Imperial New England IPA - 8.1% ABV
Pete
Pictured on the right. I know a beer is going to be good when it looks like that. This one is a bit creamy with a touch of coconut from the Sabro hops. Don't love the coconut, but it's still a very good beer.

Ratings: Pete - 4 Shyoh's

Picture
Definitive Particles
Imperial New England IPA - 8.3% ABV
Pete
Pictured on the left. A little sweeter than expected (tastes more like a 9-10% IPA), but still a very good IPA.

Ratings: Pete - 4 Shyoh's

Picture
Definitive Portals w/Peach & Vanilla
Sour - 6.3% ABV
Pete
Really good sour. It's mild-medium in sourness, with tons of peach and just a touch of vanilla. Basically slight sourness on top of peaches and cream.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Portals w/Strawberry, Pineapple, & Vanilla
Sour - 6.3% ABV
Pete
Fruity, sweet sour. Smoothie-like beer that's a great change of pace between IPA's.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Rad Wagon
Imperial New England IPA - 8.5% ABV
Pete
Collaboration with Calusa (haven't had any of those as of 10/1/21). Pictured on the left. Definitely on the dank side, but not too much. It has a little bit of citrus that leaves you wanting more of it, but it's still a damn good beer.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Radiant Days: Fruit Punch (Peach, Strawberry, Orange, & Pineapple)
Sour - 4.9% ABV
Pete
Fruity, sweet, a little tart. Great beer.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Robin
Imperial Pastry Stout - 12% ABV
Pete
There's a ton going on here. Nutty, coconut, chocolate, spice, and milky all at once. Those flavors are incredible, but it's cloyingly sweet. A small pour/taster is the right amount.

Ratings: Pete - 4 Shyoh's

Picture
Definitive Sensitive Ears
Pale Ale - 5.6% ABV
Pete
Described as smelling like lemon meringue pie and tasting like clementines. Absolutely spot on. The pie part might be a slight exaggeration, but definitely lemon. Excellent beer.

Ratings: Pete - 6 Shyoh's

Picture
Definitive Spirals
Imperial New England IPA - 8.2% ABV
Pete
As can be expected for a beer loaded with citra hops, this is a citrus bomb. A lot of different fruity flavors in there, and a slightly dry finish that leaves you wanting more.

Ratings: Pete - 6 Shyoh's

Picture
Definitive Stainless Oasis
New England IPA - 6.2% ABV
Pete
Smells incredible. Flavor is a little lemony with some melon mixed in. Finishes pretty dry. Pretty crushable, and fairly low alcohol for the style.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Stuffed
Milk Stout - 7.2% ABV
Pete
This just straight up tastes like an oreo. Obviously, that means it's really good. Definitely on the sweet side though, probably could've benefited from a touch of booziness (maybe throw it in some bourbon barrels).

Ratings: Pete - 5 Shyoh's

Picture
Definitive The Entity
Imperial New England IPA - 10.1% ABV
Pete
Definitely some good fruit flavor in this one, but like almost all IPA's this strong, it's too sweet for me.

Ratings: Pete - 4 Shyoh's

Picture
Definitive Through The Prism
Imperial New England IPA - 9% ABV
Pete
Collaboration with Belleflower. Lots of citrus, but it's just too strong. It leads to it being too sweet and finishing a little bit boozy. Not what I want in an IPA

Ratings: Pete - 3 Shyoh's

Picture
Definitive Tropical Raindrops
Sour - 4.2% ABV
Pete
Pretty darn tart with a little bit of salt and a decent amount of fruitiness to balance it. Damn good.

Ratings: Pete - 6 Shyoh's

Picture
Definitive Twilight Juice Strawberry & Kiwi
Imperial Sour - 9% ABV
Pete
Pictured on the right. This really is like a smoothie; super fruity and sweet. I have no clue how it's 9% ABV - it doesn't taste like there's alcohol at all.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Twilight Schmoojee
Imperial Sour - 8.5% ABV
Pete
Collaboration with Imprint (haven't had any of those as of 10/1/21). This certainly nails the cherry cheesecake flavor they were going for. I'm just not sure that flavor belongs in a beer.

Ratings: Pete - 4 Shyoh's

Picture
Definitive Vanilla Dome: Mango
Imperial Milkshake IPA - 8% ABV
Pete
Tons of vanilla and a little bit of fruit. Basically a smoothie masquerading as an IPA. Very good, though I must say I was obliterated when I had this, hence the hazy picture.

Ratings: Pete - 5 Shyoh's

Picture
Definitive Vanilla Dome: Peach
Imperial Milkshake IPA - 8% ABV
Pete
Pictured on the right. A little bit too much vanilla for me but the peaches & cream vibes are nice.

Ratings: Pete - 4 Shyoh's

Picture
Definitive Vanilla Dome: Strawberry
Imperial Milkshake IPA - 8% ABV
Pete
This is like a strawberry milkshake, but the vanilla and lactose are a bit too much for me in this version.

Ratings: Pete - 3 Shyoh's

Picture
Definitive Vanilla Superdome
Imperial Milkshake IPA - 9% ABV
Pete
Pictured on the left. Wasn't quite prepared for how much vanilla is in this "IPA". It really is just a dessert smoothie.
