Definitive Brewing Company

Portland, ME
Pete - This brewery is between Allagash and another building that houses 3-4 breweries - always new ones popping up, all within 1/4 mile of each other. I went here on a Friday afternoon around 3pm and stayed for 2-3 hours. It's very new, having opened in late spring 2018, and I went early summer 2019. They have a bunch of styles, a very large taproom with outdoor space, and a food truck stationed outside. You can get small or large pours, and you will most definitely not be disappointed. Somehow managed to stand out in a city of amazing breweries. They also have video games.

Definitive 35
Session IPA - 3.5% ABV
Pete
I'd have no idea this was a low alcohol beer if I wasn't told as much. Incredible amount of flavor for that percentage. Super crushable. Perfect to start your day in the afternoon (or morning), or to cap your night off when you really need one more beer but don't really need the booze that comes with it (my method).

Definitive 35 w/Blueberries & Mango
Session IPA - 3.5% ABV
Pete
As you can tell by the picture, I got pretty far into this before even considering taking a picture. It's super super drinkable (was much needed low alcohol for me at the time), but also pretty fruity and delicious. Basically a fruit beer with some hoppiness.

Definitive Baby Steps
Milk Stout - 7.2% ABV
Pete
Pretty sweet, but it actually gets balanced nicely by coconut flavor. I usually don't love coconut, but it works really well in this one.

Definitive Behind the Light DDH IPA
New England IPA - 7.4% ABV
Pete
Incredible beer. Super juicy with a tiny bit of dank mixed in. A little melon flavor in there that lingers in the finish.

Definitive Bushwa
Imperial Milk Stout - 8.2% ABV
Pete
Awesome, awesome beer. Tons of spices, a little sweet, and quite rich. It's like a complex dessert.

Definitive Distant Gardens
Imperial New England IPA - 8% ABV
Pete
Somewhat creamy mouthfeel and super juicy flavor. It leans a bit too sweet for me, but it's still delicious.

Definitive Double Dry Hopped Sensitive Ears
New England Pale Ale - 5.6% ABV
Pete
Tons of juiciness and crazy easy to drink. Pineapple and grapefruit flavors, which complement each other well. Awesome.

Definitive Double Fruited Portals (Strawberry & Vanilla + Mango)
Sour - 4.9% ABV
Pete
This just tastes like somewhere between mango juice and a mango milkshake. And there's alcohol in it. I had it in the winter, but this would be an incredible summer beer.

Definitive Float
Imperial New England IPA - 8% ABV
Pete
Really excellent, and very different. It has the citrus, creaminess, and a little peppery, but still somehow has an indescribable quality to it that puts it over the edge. You really just need to try it.

Definitive Orbit
Imperial New England IPA - 8.1% ABV
Pete
Pictured on the right. I know a beer is going to be good when it looks like that. This one is a bit creamy with a touch of coconut from the Sabro hops. Don't love the coconut, but it's still a very good beer.

Picture
Definitive Portals w/Peach & Vanilla
Sour - 6.3% ABV
Pete
Really good sour. It's mild-medium in sourness, with tons of peach and just a touch of vanilla. Basically slight sourness on top of peaches and cream.

Picture
Definitive Sensitive Ears
Pale Ale - 5.6% ABV
Pete
Described as smelling like lemon meringue pie and tasting like clementines. Absolutely spot on. The pie part might be a slight exaggeration, but definitely lemon. Excellent beer.

Definitive Spirals
Imperial New England IPA - 8.2% ABV
Pete
As can be expected for a beer loaded with citra hops, this is a citrus bomb. A lot of different fruity flavors in there, and a slightly dry finish that leaves you wanting more.

Definitive Stainless Oasis
New England IPA - 6.2% ABV
Pete
Smells incredible. Flavor is a little lemony with some melon mixed in. Finishes pretty dry. Pretty crushable, and fairly low alcohol for the style.

Definitive Stuffed
Milk Stout - 7.2% ABV
Pete
This just straight up tastes like an oreo. Obviously, that means it's really good. Definitely on the sweet side though, probably could've benefited from a touch of booziness (maybe throw it in some bourbon barrels).

Definitive The Entity
Imperial New England IPA - 10.1% ABV
Pete
Definitely some good fruit flavor in this one, but like almost all IPA's this strong, it's too sweet for me.

Ratings: Pete - 4 Shyoh's

Picture
Definitive Vanilla Dome: Mango
Imperial Milkshake IPA - 8% ABV
Pete
Tons of vanilla and a little bit of fruit. Basically a smoothie masquerading as an IPA. Very good, though I must say I was obliterated when I had this, hence the hazy picture.

Picture
Definitive Vanilla Superdome
Imperial Milkshake IPA - 9% ABV
Pete
Pictured on the left. Wasn't quite prepared for how much vanilla is in this "IPA". It really is just a dessert smoothie.
